first attempt at Brazilian cheese bread

Pao de Quejo is my favorite type of bread.1 I first had it at one of those Brazilian steakhouses where the gauchos bring skewers of delicious meat around. I’ve bought them frozen from Brazilian groceries and, in later years, grocery chains. Last time I was in a Trader Joe’s they had some in the freezer section. for anyone placing bets: my favorite food overall is Vietnamese pho and spring rolls (goi cuon). ↩

I have a near-obsession with Pao de Quejo and finally got around to making a batch.

Having an oven (toaster oven in this case) in a van probably isn’t common but they are great for comfort foods.

I derate mine to ~600w with an inexpensive router speed control. Takes a bit longer to preheat but holds temps nicely.
