    Rice cooked with Kaffir lime leafs. Semur made with aubergine, Spicy potatoes with petai beans and eggs in coconut petai bean sauce.

        I haven’t had a lot of Indonesian food but I had a vegetarian take-away from a restaurant in Amsterdam, years ago, and it included something that was the best chicken substitute I’ve ever had. It was slightly crispy on the outside and firm to the bite. Maybe it was fried tofu, but I’ve not managed to make that crispy. Any thoughts?

          The fresh Indonesian tofu or Tahoe is very easy to get crispy. Just deep fry or shallow fry. It’s a little bit bitter and soft and fluffy on the inside. I can’t think of other vegetarian options that are Indonesian. Maybe seitan but never seen it used in Indonesian cuisine.
